Birria is a traditional Mexican dish with meat cooked slowly in a sauce. If you’re like me, you may have been introduced to birria through birria tacos, which have been taking over restaurant menus over the last few years.
Birrias are so much more than just trendy tacos though, and in his book, Birrias, Jesse Valenciana explores the traditional celebratory meat stew. I particularly loved his chapter called Global Fusion, so that’s our focus for this meal.
We’ll fuse a classic beef birria using chuck roast and beef short ribs, then taking it in a new direction—pairing it with ramen noodles and all the worthy fixings.
