He is currently the Director of Plant-based culinary for Rouxbe Online Culinary School and has built classes for chefs like Jacques Pepin, the Blue Zones and the French Pastry School. He worked for Whole Foods Market developing plant-based recipes and trained over 40,000 school food professionals how to incorporate scratch cooking and plant-based meals into schools.
