Choux pastry, also known as pâte à choux, is indeed a versatile and essential component of French pastry cuisine.

When attending a hands-on class focused on making choux pastry and its various applications like eclairs, gougeres, and churros, you can expect an informative, enjoyable, and interactive experience.


  • Mini Chocolate Éclairs filled with chocolate pastry cream and dipped in chocolate glaze.  Éclairs are elongated, hollow pastries made from choux pastry dough. They are typically filled with flavored pastry cream or whipped cream and topped with a glossy glaze or powdered sugar.
  • Vanilla Bean Craquelin Choux filled with pastry cream and melted chocolate 
  • Gougeres Sandwiches with Prosciutto and Arugula: Gougeres are savory choux pastry puffs. They are often filled with cheese, most commonly Gruyère or similar cheese, and have a delightful cheesy flavor. They make for excellent appetizers or snacks.
  • Churros with dulce de leche:  While churros are more commonly associated with Spanish cuisine, they are sometimes made with choux pastry in France. Churros are deep-fried dough sticks, often coated in cinnamon sugar. They are popular as a sweet treat or snack.

All About Choux will start with an overview of the recipes you’ll be working on and the basic steps of making choux pastry for sweet and savory applications.  You’ll have the opportunity to get your hands dirty and make the choux pastry yourself, which is the most exciting part of the class, as you’ll learn the texture, consistency, and technique required to create perfect choux dough.  All materials and ingredients will be provided, so you can focus on the learning and baking process.
