Making pie dough for Thanksgiving doesn’t have to be stressful! The Book Kitchen team is excited to welcome our friend and community pie expert, Mike Christensen, for a hands-on class dedicated to mastering the perfect double-crust pie dough.

Mike will share his tried-and-true techniques, along with the essential tips and tricks that make pie dough successful every time. We’ll go beyond the recipe to explore the why behind each step—how ingredients work together, how technique affects texture, and how to create a flaky, tender crust with confidence.

You’ll learn the secrets to mixing, rolling, shaping, and baking pie dough, including how to troubleshoot common challenges and achieve beautiful results at home.

By the end of the class, you’ll take home a batch of pie dough ready to become your own Thanksgiving double-crust pie.

As a special bonus, Mike is generously donating his instructor fee to Shake Rag Alley Center for the Arts. We’re grateful for the opportunity to support this amazing community organization.
