Mastering Skills Series: Ice Cream Making

This class focuses on the core techniques to produce high-quality ice cream from scratch – and at home. We will demonstrate how to build a properly balanced ice cream base, including the correct ratios of dairy, sugar, and egg yolks, and explain how each ingredient contributes to texture, stability, and flavor. Participants will learn key technical steps such as mixing, heating, pasteurizing, chilling, and churning, with emphasis on how these processes affect ice crystal formation and final consistency.
We will also review essential food safety practices, including proper temperature control, safe handling of egg-based custards, and correct storage procedures. In addition, the class will cover practical guidance for using home ice cream makers, including preparation, freezing, and troubleshooting common issues.
A cash bar will be available for all ticketed guests.
