We’ll explore how to select, season, and prepare fresh tomatoes while practicing foundational kitchen skills like knife work, roasting, balancing acidity, and building emulsified sauces. You’ll prepare a variety of dishes showcasing tomatoes in raw, roasted, and preserved forms — and enjoy a shared tasting at the end of class.
